“Scaling that kind of demand takes more than a great product; it requires systems that can keep up without slowing the team down.”

Drunken Cookies didn’t grow by playing it safe. Built around oversized, high-impact cookies and a late-night crowd that shows up fast and all at once, the brand lives in moments most operators struggle to manage - sudden spikes, heavy order flow, and zero room for mistakes. Scaling that kind of demand takes more than a great product; it requires systems that can keep up without slowing the team down.
We sat down with the team behind Drunken Cookies to talk about building for volume, staying consistent under pressure, and how Stream helps bring structure and control to the operational chaos as they scale.

Drunken Cookies has built a reputation around big, indulgent cookies and a fun brand personality. When you were first developing the concept, what were the product standards you set that still define the brand today?

From day one, the non-negotiable standard was absolute control over our product. We produce all of our cookies entirely in-house right here in Old San Juan, PR, and even as we’ve scaled, that core standard remains. We source premium ingredients directly from the source so the quality never slips. Also, a key standard is keeping the focus on the product itself. Despite the name, which originally nodded to our "cookie shots," our cookies contain zero alcohol. The standard has always been pure, high-quality indulgence.
With a product like yours, quality and consistency are everything. What are the key operational disciplines in the kitchen that ensure every cookie meets the same standard?
Consistency at our scale requires the right marriage of culinary passion and strict kitchen discipline. A major focus for us is ensuring that the exact dough-to-filling ratios and weights are flawlessly replicated on every single cookie. The discipline comes down to rigorous quality checks and ensuring our baking team follows the exact same careful procedures whether it's a slow Tuesday morning or the middle of a weekend rush. Every cookie that leaves our kitchen needs to look and taste like the ultimate treat our customers expect.
Shops like yours often see big swings in demand - late nights, weekends, tourism, and social media traffic. What are the biggest operational challenges that come with managing that kind of volume?
The biggest operational challenge is ensuring our fulfillment speed matches our kitchen's output without compromising the customer experience. When a massive spike hits, bottlenecks don't usually happen in the ovens; they happen in the packing and dispatching phases. To manage this, we’ve refined our packing process to be incredibly organized. Our team relies on a seamless workflow that ensures even during the wildest peak volume, every single cookie is packed carefully and dispatched accurately, so the presentation and unboxing experience are exactly what our customers expect.
As the business has grown, how have you approached the technology behind the scenes, especially when it comes to managing orders, delivery platforms, and integrations between systems?

We treat our tech stack with the same level of care as our recipe development. On the front end, everything is focused on making the ordering experience as fun and effortless as possible for our customers. On the back end, managing the flow of orders between our website, delivery platforms, and our kitchen has to be absolutely seamless. Because this infrastructure is so critical to getting our cookies to people fast, we have an in-house development team dedicated to tightly controlling our systems so the customer journey is flawless from click to first bite.
Where has Stream made the biggest difference in simplifying your operations, and how has it helped the team manage orders and platforms more efficiently day-to-day?
Stream has been instrumental in keeping our operations running smoothly. When you are receiving orders from multiple platforms at once, fragmented systems can easily disrupt our rhythm. Stream centralizes all our incoming orders, creating a frictionless handoff between the customer ordering and our packing floor. It has also been a massive help in allowing us to easily manage delivery from our remote mall locations, keeping everything completely synced. For our entire team, this means less time staring at disconnected screens and more time focusing on what actually matters: delivering incredible cookies.
